Aging: 12 years
Before arriving on the market, the Traditional Balsamic Vinegar of Modena DOP rests in small barrels made of different types of wood for at least 12 years and subsequently evaluated by the commission of certified tasters. After passing a rigorous examination, it is bottled and marked as D.O.P. The judgment of the tasters is expressed with a score, necessary to classify the Aceto Balsamico Tradizionale di Modena DOP Affinato aged at least 12 years, or Extravecchio aged at least 25 years, the only two recognized types. The container in which the Traditional Balsamic Vinegar is packaged must be unique in shape and capacity. 100 ml
